Cole cannon is a traditional Irish side dish. I love it! It tastes like creamy mashed potatoes but with less butter and milk, and the kale adds a nice flavor profile. If you need a way to sneak in some green leafy vegetables, colcannon is a great recipe to do this with. Garlicky, creamy, healthy, and delicious. Try this one out for a week night meal or a wonderful St. Patrick’s Day dish!

Serves: 4

-5 cups chopped kale

-5 large potatoes of any kind

-4 cloves garlic, minced

-1/2 stick butter, melted

-4 oz cream cheese

-1 teaspoon salt

-1/2 teaspoon pepper

Peel then slice your potatoes into 1/2 inch slices. Add to a pot with water and when they are fully cooked, add the chopped kale into the boiling water and stir. Cook the kale for 2 minutes in the water, then drain the whole thing in a colander. Using the now empty pan, add 1/2 stick butter and 4 cloves minced garlic. When butter is melted, turn off the heat. Add the vegetables, garlic & butter, 4 oz cream cheese, 1/2 teaspoon pepper,  and1 teaspoon of salt into the food processor. Process until completely smooth, and taste for salt. Enjoy!
